Bitter green salad with apple and walnut
The bitter leaves and tart green apples in this classic salad perfectly complement the more decadent flavours of a Christmas menu.

Ingredients
- 2 green witlof, trimmed, leaves separated
- 2 small green apples, thinly sliced
- 1 small head frisée, outer leaves discarded
- 30 gm baby snow pea tendrils
- 80 gm roasted walnuts
- Baby celery
Buttermilk dressing
- 125 ml (½ cup) buttermilk
- 2 tbsp each Kewpie mayonnaise and lemon extra-virgin olive oil, plus extra for drizzling
- 2½ tbsp finely chopped basil
- 1 garlic clove, finely chopped
- Juice of 1 lime
Method
- 1To make buttermilk dressing, place all ingredients in a blender, season to taste and blend until combined.
- 2Place remaining ingredients in a large bowl with half of the dressing, season to taste and toss to combine. Arrange in a large bowl or serving platter, drizzle with remaining dressing and scatter over baby celery leaves.
