Bitter green salad with apple and walnut

The bitter leaves and tart green apples in this classic salad perfectly complement the more decadent flavours of a Christmas menu.

Ingredients

  • 2 green witlof, trimmed, leaves separated
  • 2 small green apples, thinly sliced
  • 1 small head frisée, outer leaves discarded
  • 30 gm baby snow pea tendrils
  • 80 gm roasted walnuts
  • Baby celery
Buttermilk dressing
  • 125 ml (½ cup) buttermilk
  • 2 tbsp each Kewpie mayonnaise and lemon extra-virgin olive oil, plus extra for drizzling
  • 2½ tbsp finely chopped basil
  • 1 garlic clove, finely chopped
  • Juice of 1 lime

Method

    To make buttermilk dressing, place all ingredients in a blender, season to taste and blend until combined.

    Place remaining ingredients in a large bowl with half of the dressing, season to taste and toss to combine. Arrange in a large bowl or serving platter, drizzle with remaining dressing and scatter over baby celery leaves.
